Witness is a great example of this, but were you aware of <a href="http://www.wikileaks.org/wiki/Wikileaks" rel="nofollow">Wikileaks</a>? This site encourages whistleblowers and encourages use of The Onion Router and the TORPark browser to protect anonymity. I haven't had occasion to contribute anything...yet.
